Heart Healthy Recipe: Mediterranean Chickpea Salad

Mediterranean Chickpea Salad

Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/4 red onion, finely chopped

1/4 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled (optional, if vegan)

2 tbsp fresh parsley, chopped

2 tbsp olive oil

1 tbsp red wine vinegar or lemon juice

Salt and pepper to taste

1 tsp dried oregano

 

Instructions:

Prepare the Vegetables:

  • Halve the cherry tomatoes.
  • Dice the cucumber.
  • Finely chop the red onion.
  • Slice the Kalamata olives.
  • Chop the fresh parsley.

 

Combine Ingredients:

  • In a large bowl, add the drained and rinsed chickpeas.
  • Add the cherry tomatoes, cucumber, red onion, olives, feta cheese (if using), and parsley.

 

Make the Dressing:

  • In a small bowl, whisk together the olive oil, red wine vinegar (or lemon juice), salt, pepper, and dried oregano.

 

Toss the Salad:

  • Pour the dressing over the salad and toss until everything is well combined.

 

Serve:

  • Serve immediately or let it sit for a few minutes to allow the flavors to meld together.

 

Tips:

  • For added protein, include some cooked quinoa or a handful of nuts like almonds or walnuts.
  • To make it vegan, omit the feta cheese or replace it with a vegan cheese alternative.
