Mediterranean Chickpea Salad

Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, finely chopped
1/4 cup Kalamata olives, pitted and sliced
1/4 cup feta cheese, crumbled (optional, if vegan)
2 tbsp fresh parsley, chopped
2 tbsp olive oil
1 tbsp red wine vinegar or lemon juice
Salt and pepper to taste
1 tsp dried oregano
Instructions:
Prepare the Vegetables:
- Halve the cherry tomatoes.
- Dice the cucumber.
- Finely chop the red onion.
- Slice the Kalamata olives.
- Chop the fresh parsley.
Combine Ingredients:
- In a large bowl, add the drained and rinsed chickpeas.
- Add the cherry tomatoes, cucumber, red onion, olives, feta cheese (if using), and parsley.
Make the Dressing:
- In a small bowl, whisk together the olive oil, red wine vinegar (or lemon juice), salt, pepper, and dried oregano.
